Chestnut honey is produced in the high mountains in the north of the Iberian Peninsula and in some central western and southern regions where there are chestnut forests.
Amber in color, sometimes quite dark if it contains honeydew or with reddish tones if it contains heather. Dry wood aroma and sweet to the taste with salty notes. Sometimes, if it contains heather, it can have slightly bitter notes and if it contains blackberries it can have slightly acidic notes. It tends not to crystallize.
