Mediterranean mountains are covered with cork, holm oak and oak trees and in the clearings by scrubland, broom, heather and labiates such as rosemary and thyme.
Amber to dark amber in color. A floral aroma dominates with some fruity, malty or earthy notes. Its sweet flavor is tempered by some salty notes. Variable crystallisation that tends to be rapid.
Traditionally consumed as a diuretic. Like all dark honeys it combines well with meats in moderate quantity and added towards the end of the cooking period. Also combines well with nuts.
