In Andalusia and Extremadura, Black Eucalyptus (Eucalyptus camaldulensis) and on the Cantabrian Coast White Eucalyptus (Eucalyptus globulus).
Clear amber color, floral aroma with marked, very intense and very persistent moist wood component. Sweet to the taste with slightly acidic and salty notes.
Traditionally used for respiratory and urinary infections and as an antiseptic or as a balsam. Combines well with strongly-flavored fish and with white meats as well as with salads and some flavorsome fruits such as peaches.
